When I change mine, I drain out the old, then put about 1/2 new in and spin the wheel to churn it around and clean out the old some more, then I drain it, put in the drain plug and fill as Knuckles has suggested.
In the Vulcan 750, like most motorcycles, the transmission is lubricated with the same oil as the engine. So you want an oil that is able to handle "shear" forces. Lots of choices, Shell Rotella-T works well.
