Let me give you the scenario. I was riding my bike for maybe 10 minutes. I was at a crusing speed of 55mph. Without warning the bikes oil light came on and at the same time bike stalled out. I was able to start the bike up right away while coasting. Went less that a half a mile and bike was responding weird to throttle, just seemed off and then the oil light came on again and bike stalled out again. This time it would not start right away and I had to pull over. I thought I was dead in the water but after several minutes of trying it did start up. Turned around and headed home and the ride home I had no problems. A co-worker of mine said I could be low on oil. Checked the oil level and it is right on the "H" line. This is where I need input, I'm handy with vehicles but new to bike engines. So any type of analysis help would be appreciated. It is a 2003 Vulcan 750 w/32000 miles on it.

Try the side stand safety switch. The oil light may be coming on because the engine is dying. Spray the switch with wd, panther piss or whatever and work it a bit. Try riding bike again.
BTW welcome.

if you just changed the oil, there may be a air lock in the filter, if you didnt pre fill it first. try burping the filter, by unscrewing it just a little, untill oil starts to come out. have a rag handy to catch the oil.

As far as I know this bike does not have a cut off when the oil pressure drops. Or does it?

Even if the engine stalls the light should not come on until the engine stops turning. I suppose you didn't pull the clutch and the engine did keep on turning? There is no oil pressure cut-off. This makes me think that perhaps the wire from the oil light to the pressure sensor shorts out to some other wire, which causes the engine to stall.

oil light coming on and bike stalling

Not sure what the temp was when the stall occured. After reading the comment about wiring issue I'm not sure if light came on and then bike stalled out or if bike stalled out at the same time that the oil light came on. It all happened so fast that it is possible that the stall and oil ligt coming on could have happened at the same time.
