Check the routing of your cables.

As Brian said, check your throttle cables, sounds like they are not routed right.

I had that problem early on--I was twisting the throttle as I turned the handlebars.

Cables and are you using stock bars or are they wide/taller? I put some tall pull back bars on my VN once and the only way I could avoid the problem was to route the cables outside the tank.

Check for idle screw adjustment...

I didn't know 'jack' re: the VN750 when I bought mine, so I didn't know the the idle screw adjustment was missing. When I turned the handlebars to the right, the revs would increase; when I straightened it out or turned to the left, no problem. That's when I also learned that sometimes you have to wait a while before a part arrives from Japan!
