I would like to leave my carbs with the original jets, needle height etc. With K&N RC2340 air filters, would that result in too lean a mixture (too much air getting in), or are people just rejetting for different (better) performance? Also anyone tried covering part of the air filter to make the mixture richer?

Have Uni PK92 pods on mine, stock carbs and stock pipes. Any richer, it would probably be flooding. Runs great.

edit: When I did the shave, I decided to put the pods on then ride, read the plugs and let the color show me what's up.

As long as I've been wrenching, an air filter change has never required carb jetting. Adding headers or open pipes is where the engine goes lean.
