My bike will "jerk" while rev-ing through 2nd gear. As I rev up the jerking becomes more apparent & with greater frequency in the higher RPM's. What can be causing it & how do I.fix it?

could be clutch adjustment or worn clutch plates I suppose.

maybe rear splines?? but I would assume that would not happen just in second gear.

maybe change the oil with a good 10W-40 (don't use 30 weight oil or anything labeled "energy saving") oil and inspect the screen to see what is in the oil. Look for clutch wear particles or any other debris stuck to the screen behind the drain plug on the left side.

that should tell you a lot without tearing into the case.

Knifemaker may have this nailed, but I'm a little unclear on your exact issue. I've never heard of this before.
Is the bike new to you?
Did this just start happening?
Are you an agressive shifter?
Does it happen every time you are "revving" through second, or just sometimes?
So, in second gear, when you are rapidly accelerating, the jerking starts and continues until pulling the clutch for third gear?
If you let off and then throttle again, does it stop?
Does it still jerk under more normal acceleration?

Have you gone through adjustments to the cable, clutch lever?
Have you changed the oil lately? What are you using?
Where do you live (climate)?

Well that is no longer a current issue since the cam chain tensioner broke so I swapped out engines on my VN750 bobber project bike. I will rebuild the engine & let you know what it was.

Was it a stock ACCT?
