Good choice on the `91, that`s the fastest colors you know. lol. Here is a link to the Vulcan Verses and info on doing an "ear shave", to get rid of the air filter boxes on each side and the big air box under the tank, that is a pain to work around, when pulling the engine, etc.
There are a lot of guys who have done it, and may have more up to date info on parts or suppliers than the verses do. lance328 will probably drop in and give you some advice. He is a licensed auto mechanic, and has rebuilt a few vn750s, including his own. He is one of our best "go to guys" active on the forum right now.

While you are rebuilding the engine you might want to rebuild the Automatic Cam Chain Tensioners (ACCT) with heavy duty springs from www.tocmanufacturing.com
, or even swith to Manual CCT`s. I`m wondering if loose/weak tensioners might have been responsible for premature wear and the breaking of the cam chains.
