I was wondering what the idle speed should be at because mine is below 1000rpm?

1100-1200 is recommended, mine idles and takes off best at 1200.

If you're sitting on the bike, on the left side by the rear cylinder is a black knurled knob. Turn clockwise to raise rpms.

By turning the black knob on the left side carb.... It's called the "idle adjustment knob"

Do this after the bike has warmed up and turn slowly abit at a time until you reach the desired rpm level ... (Just at or slightly above 1100 rpms)

Idle speed may float around a bit depending on air and engine temperature-- this can usually be reduced by adjusting the idle mixture screws.
