Coolant drain and replace

I will be draining and replacing the coolant in my VN 750 (Year 2000) this weekend along with a thermostat replacement. If anyone here has any advice or tips I would appreciate them beforehand. She started to edge towards the overheating zone during my return trip from Roar to the Shore this past weekend. I was riding a solid 70 mph for about forty-five minutes when I noticed the temp. gauge on the tach start to rise. I lost some fluid which I replaced with water and a cooling down period while still on the road (Thanks to some nice owners of a restaurant) and finished the ride at 50 - 55 mph and twenty minutes of constant gauge watching. She had been fine during the ride down and while in Wildwood. I was told by two Kawa mechanics that it most likely sounds as if the thermostat froze shut from the sequence of events. I have checked for leaks and hose conditions and all seems good at this time. Thanks for any advice on this matter.
