Rejet size for ear shave, straight pipes, WITH goat's belly?

My bike has been earshaved with K/N pod filters and currently has a stock exhaust setup. I never rejetted anything after ear shaving, and it runs well enough but seems a little low on power, not too bad though. I'm looking to take off the stock exhaust and fabricate some short straight pipes that I want to attach to the back end of the goat's belly.

Most rejet advice I see here involves either ear shaved with stock exhaust or ear shaved with new exhaust and no goats belly.
I plan to do some tinkering and figure out what I need to do but I'm looking for some advice on a good starting point.

Also, suggestions on where to buy the jets from are welcome.

1995 VN750:
Ear shaved, re-jetted with 142/42 & 2 needle shims.
New modified front end with Maier GP fairing, half-ape handlebars, supersport grips and bar-end mirrors.
Stock seat, cut and modified to remove the passenger backrest.
Factory-Spec Sportster shocks.
Self-fabricated rider's backrest.
Engine guards and highway pegs.
Custom-made straight pipes, fiberglass-wrapped exhaust.

I'm ear shaved with stock exhaust and at 1st I ran 142 42 but it was running a bit rich so I then tried 140 42 before finally settling on 142 40 as the best fit for my bike.

If you want new jets and pilots at a good discount I have brand new unused sets of 40s 138s and 140s from jetsrus available. Stock is 38 and 132. (I accidentally duplicated ordered double sets of all!)

I am earshaved stock exhaust and run 40 pilots 138 mains. (+5% fuel on both from stock). Others go for the 140s.
