Where there is a will, there is a way...haha. Yes, it can be done as I actually just did this 2 weeks ago. First off, you have to have the acceleration cable (pull cable) disconnected from the carb or you'll have no chance...I imagine you have this done though. The way I was able to get it was to first run the cable along the bike and up over the forks...but leave yourself as much extra sheathing as you can on the lower side of the fork to give yourself room to work. Pull the actual cable through the sheathing all the way taught to the lower/carb end. I found it easiest to not actually touch the carb during this next part. Also, it will help a lot if you can get someone to hold a flashlight on the eyelet. Now if you carefully thread the cable back to the eyelet, just try to catch the cable end on the eyelet and put just a hair bit of pressure on it. Now take a long screwdriver with your other hand and gently rotate the cable into the slot and let the cable end slot into the eyelet. Once its slotted, readjust the cable/sheathing so you can attach the other end to the throttle grip. It may take 2 or 3 tries...it's really tight quarters. But if you're working with newer cable it wasn't that horrible. Good luck!
