Hard to say for sure, maybe around 38 pilot and 138 main, 38/140, but no larger than 40/140 is my guess. Almost everyone trying a 142 main has found it way too rich.

Need to know what size is already in your carbs (700cc with pipes), and then read the plugs after the mods are done.

While riding to get a plug reading, watch for high engine and exhaust pipe temps, any hesitation, bogging, etc.

What does the chrome look like on your pipes? Closed to the engine, is the chrome turning blue or gold anywhere now? That would give an idea of how it's been running up to now.

I am not sure what size jets are now, previous owner could tell me as well.. I guess it was mounted long ago..

I really like that wider seat extension you've got for the passenger. Was that a custom-made piece, or something you can purchase?

One more thing i notice, when I sinchronise carbs, was very low vacuum intake.. Don't think its has something to do with jets, but in general don't know why is that.. But engine runs good..

Even a stock 750 will have some discoloring, these were set up lean originally.

Just keep an eye on the pipes to see if the color starts changing, another sign of being lean and running a bit hotter.

Since the pipes aren't open, you may not need to re-jet.

Not sure what vacuum reading should be., but if your petcock leaks, there coulf be a vacuum leak there too. Check the petcock vacuum hose and make sure there's no gas in at all.
